Pumpkin Cake with Cream Cheese Icing

This is one of Courtney's favorite desserts for Thanksgiving.

Pumpkin Cake with Cream Cheese Icing

4 eggs
2 tsp cinnamon
2 c sugar
½ tsp salt
1 cup oil
2 cups pumpkin (16 oz can)
2 cups flour
1 tsp baking powder
2 tsp. baking soda

Beat eggs with sugar until well blended. Add oil, continuing to beat. Sift dry ingredients, beat into mixture. Add pumpkin. Pour into greased and flour pan. Bake 55 minutes at 350 degrees.

Cream Cheese Icing

8 oz. cream cheese
½ cup butter
1 lb conf sugar
1 tsp vanilla

Combine cream cheese and butter. Add other ingredients except pecans. Beat till smooth. Sprinkle pecans on top.
